No Cook Summer Recipe

Let’s be honest, using the oven on a hot summer day is no one’s idea of a picnic. If you need a break from preheating, baking, and everything else that requires turning your kitchen into a hot yoga studio, worry not! We found some scrumptious recipes that require ZERO heat.
Pesto, Tomato, and Mozzarella Sandwich. It’s simple, it’s homemade, and best of all, no oven required (unless you like to heat your rolls). If you’ve never made pesto before, it’s delightfully easy and calls for just a few ingredients and a mixer. Spread the delicious paste onto the bread, slice up some fresh tomato and mozzarella, and you have yourself a yummy lunch or dinner. RECIPE
Southwestern Veggie Wrap with Creamy Smoke Dressing. If you wanna ditch the grill for your next backyard party, try making these tasty wraps! Ingredients include: lettuce, black beans, pepper jack cheese, tomatoes, bell peppers, tortilla wraps, and a smokey BBQ dressing of your choice. RECIPE
Blueberry Broccoli Spinach Salad. This is a great “no cook” dish for when you need something light and refreshing! Plus, who doesn’t love blueberries in their salad? Paired with spinach, avocado, feta cheese, cranberries, and a drizzle (or a hefty pour) of poppy seed dressing, this is one salad you’ll want to dish out every summer…and probably Thanksgiving. Vegan Curry over Zucchini Noodles. Love being adventurous with food? Here’s a dish that might not be in your weekly lineup. Using a spiralizer (click here if you’re not sure what this is), take some washed zucchini and make a nice bowl of zoodles, then top it off with a thick, creamy dressing made from coconut water, raw cashews, garlic clove, a large avocado, curry powder, red chili paste, cayenne, and sea salt.
