It’s the most wonderful time of the year…time for backyard barbecues with the family and your quarantine buddies! If you didn’t read last week’s blog post, we shared how you can bring the joy of summer camp to your home for your kids this summer. And this week, we thought a great addition to the summer fun would be to share some of our absolute favorite BBQ dishes with you, so you can incorporate them in your weekly menu (and maybe even your at-home summer camp). So read through our recipe guide, choose one item from each category, and get grilling for a four-course summer BBQ delight!

Corn

Appetizers

Skillet Spinach-Artichoke Dip

Dip

Spinach-artichoke dip is one of our favorite appetizers. It’s cheesy, toasty, and can even count as some of your daily vegetables. This recipe is baked right on your grill under indirect heat and only requires one twist of the skillet. Grab your favorite bread, blue corn tortilla chips, or butter crackers and enjoy!

Grilled Foil Nachos

Nachos

One of the best grill hacks are foil nachos. What are foil nachos? They’re easy! All you have to do is add all of your nacho ingredients into your foil basket, wrap it up and throw it on the grill for melty, crispy nachos. Make it fun for the kids and create a nacho bar! Let them customize their nacho creation inside the foil with whatever toppings they want and then throw them on the grill. Pro tip: Mark the foil with your kids’ initials to remember whose nacho creation it is.

Entrees

Jalapeño Popper Burgers

Burgers

Ever had jalapeño popper dip, a delicious mix of spicy cream cheese, cheddar, and mozzarella? Imagine this dip inside of a perfectly seasoned angus beef patty! Every bite is cheesy, spicy, and perfectly balances the patty. This is a must-try for your backyard BBQ this summer and is sure to satisfy all of your cravings.

Blackberry Glazed Chicken

Chicken

Blackberry glazed chicken? You got that right. Marinate your chicken with this blackberry and white wine vinegar sauce that will glaze and caramelize as you grill it. Consistently baste your chicken for the most perfect tangy first bite!

Grilled Shrimp Tacos with Sriracha Slaw

Shrimp

Okay, need we even say more? These grilled shrimp tacos will instantly become a family favorite for your backyard BBQs this summer! Marinate and grill your shrimp in your favorite style and add a sriracha cabbage slaw for a fresh crunch and gorgeous color. And of course, you cannot have enough lime for these zesty tacos. Enjoy!

Easy Grillable Veggie Burgers (VG + GF option)

Veggie

For any plant-based folks, or anyone looking to reduce their meat intake but still participate in the BBQ fun, these veggie burgers are made with black beans, brown rice, walnuts, and a bunch of warm spices to create a hearty, filling entree. Add all of your favorite veggies and your favorite bread for an irresistible BBQ burger!

Sides

Vegetables

The barbecue is the best place to cook your veggies! The grill marks, the smokey flavor, the charred edges… our mouths are watering! Some of our favorite grilled veggies are corn, potatoes, grilled broccoli, asparagus, and squash. Experiment with different flavor combinations and spices to enhance your veggie game and create the perfectly paired side to any entree!

Roasted Broccoli Salad with Lemon Vinaigrette

salad

Put your roasted veggies to good use with this zesty roasted broccoli salad. The best part about salad is that you can add any vegetables, legumes or toppings you want to create the perfect bite. Experiment with different beans, edamame, sunflower seeds, sliced apples, chopped nuts, proteins, and more! Yum!

Skillet Grill Brownies

Brownie

It wouldn’t be the perfect BBQ four-course meal without dessert. And you guessed it, this is made on the BBQ too! These skillet brownies retain all their moisture while giving off a smoky brownie flavor that you didn’t know you needed. Go pizookie style and add some scoops of ice cream and you’re in for the perfect end to the BBQ feast.

Apple Pie (VG)

Apple

Oh, apple pie. It’s a BBQ classic and this recipe is made entirely from scratch. Yes, even the dough. The ingredient list is everything you will already have at home, making it easy to whip up, even if you haven’t been to the store in a while. And best of all, this recipe is vegan-friendly!

We hope you try out at LEAST four of these recipes and can see what all the talk is about. Set yourself up for success by prepping all of your ingredients before you start cooking, so everything can be ready to eat at the same time. Enjoy your backyard BBQs everyone. Happy summer to you!
